Not only have I been busy learning how to grow my own vegetable garden, I have been interning for Growing Gardens!!! a local non-profit that works to create sustainable organic gardens in peoples' backyards and in public school spaces. In my internship, I have been working with Faubion Elementary School in the Northeast part of town, co-teaching the Garden Club. What a blast it is gardening &amp;amp; learning with kids. (The pictures above are the sample vegetables that I made for the activity!)&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Square foot gardening&lt;/span&gt; is &lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://2.bp.blogspot.com/_04Ztd92WO_8/S75xSVN0LQI/AAAAAAAAAbc/MDx4jmbHTo0/s1600/GG-6293.jpg"&gt;&lt;img style="display: block; margin: 0px auto 10px; text-align: center; cursor: pointer; width: 320px; height: 289px;" src="http://2.bp.blogspot.com/_04Ztd92WO_8/S75xSVN0LQI/AAAAAAAAAbc/MDx4jmbHTo0/s320/GG-6293.jpg" alt="" id="BLOGGER_PHOTO_ID_5457924358166293762" border="0" /&gt;&lt;/a&gt;basically dividing a garden bed into square feet, like the 3x3' sheet of fabric I sectioned off above (it is one of the pieces of the activity too!).  Then planting a specific veggie/plant in that square foot. The square foot gardening method helps a new gardener think about  spacing. For example, you would only plant 1 tomato plant in one square foot or you could plant 9 beets in one square foot.&lt;br /&gt;&lt;br /&gt;In my garden, this method is helping me think about rotational gardening, as it allows me to clear and replant a block without disturbing other areas of my garden. This is my very first year of square foot gardening, and so far, I am having lots of fun!! It feels so satisfying to finally know how butter is made! Also, my first bite of  homemade bread and butter, was... O, SO GOOD.&lt;br /&gt;&lt;br /&gt;Having already made bread before, I thought I remembered most of the recipe... however, after kneading and setting the dough to rise, I realized I forgot to add milk! Just to note, I made enough dough for 4 loaves of bread. Oh-NO0oo!  I dashed over to my computer, remember "attempts" to become self-sufficient, and found this lovely video that set my heart at ease. &lt;a href="http://www.youtube.com/tinyvegankitchen#p/a/u/1/f9Vx4Kp_u_k"&gt;vegan bread = no milk&lt;/a&gt; HOORAY!&lt;br /&gt;&lt;br /&gt;Now, perhaps after my wonderful success, you would like to try? The bread and butter recipes are below....&lt;br /&gt;&lt;br /&gt;One Loaf of Bread.&lt;br /&gt;1 package dry yeast (or 2 1/4tsp yeast)&lt;br /&gt;1 cup warm water&lt;br /&gt;5 tsp sugar&lt;br /&gt;1 tsp salt&lt;br /&gt;5 tsp melted butter&lt;br /&gt;2 1/2 - 3 1/2 cup flour (white, wheat, or mix-it-up)&lt;br /&gt;1 wooden spoon&lt;br /&gt;1 mixing bowl &amp;amp; towel&lt;br /&gt;1 loaf tin&lt;br /&gt;1 oven (haha)&lt;br /&gt;&lt;br /&gt;1.  Mix the yeast with warm water (not to cold, not to hot, yeast is very particular)!&lt;br /&gt;2.  Mix the yeast until it dissolves in the water.&lt;br /&gt;3.  Add in sugar, salt, and melted butter, stirring the whole time!&lt;br /&gt;4.  Add the flour 1 cup at a time, be sure to mix it!&lt;br /&gt;5.  Once the flour is mixed it seems as though the dough is clumped to your spoon.&lt;br /&gt;6.  Knead for about 10 minutes.&lt;br /&gt;7.  Let it rise in a warm place for 1 hour (place your towel over the dough).&lt;br /&gt;8.  Knead the dough into a loaf shape!&lt;br /&gt;9.  Let it rise in the loaf tin for 1 hour (use the same warm place and towel).&lt;br /&gt;10.  BAKE! 400 degrees for 30 mins.&lt;br /&gt;&lt;br /&gt;A Little Jar of Butter.&lt;br /&gt;1 pint of organic heavy whipping cream&lt;br /&gt;1 mixing bowl&lt;br /&gt;1 mixer&lt;br /&gt;1 spatula&lt;br /&gt;ice water&lt;br /&gt;extra jars&lt;br /&gt;&lt;br /&gt;1.  Start mixing the heavy cream, medium speed, about 10mins. &lt;br /&gt;2.  The cream will turn fluffy, then clumpy. When it's clumpy, start mixing by hand.&lt;br /&gt;3.  Buttermilk will collect at the bottom of the bowl. Pour this off into your extra jar and use it for baking!&lt;br /&gt;4.  With your spatula, start squeezing out the buttermilk.&lt;br /&gt;5.  After most of the buttermilk is gone, you need to wash the butter (to keep it from spoiling).&lt;br /&gt;6.  To wash, add 1/2 cup of ice water and press the butter and water against the side of the bowl.&lt;br /&gt;7.  Pour off the cloudy water. Repeat until the ice water stays clear.&lt;br /&gt;8. You can stamp it, draw on it, paint it, color it, or cut it. Most people I have talked to about PolyShrink, say "Oh yes, I did that once when I was young." Unfortunately, I did not even hear about the stuff until a year ago, so I thought there is no better time to try it than now!&lt;br /&gt;&lt;br /&gt;The special quality in PolyShrink that I find soOOoo magical is...  after you draw something on it, you heat it and "POOF!" the piece starts shrinking to about half its size. It is so fun to watch, I just giggle as I am doing it. heehee&lt;span style="font-size:85%;"&gt;hee&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;With the fun I have been having, I decided I should make earrings so I could share my fun with everyone. It was hard, cold, wet, rugged, 6 miles and AWESOME. I placed 27th in my age bracket and took about 1 1/2 hours to complete. The course, created by the &lt;a href="http://www.xdogevents.com/"&gt;X Dog Events&lt;/a&gt;, happens annually. This year they maxed registration and represented 21 states!! woo-hoo. The event is quite a spectacle!! Starting in Atlanta, Georgia and heading West along the Gulf Coast towards New Orleans, Louisiana, we met with many community leaders, activist, volunteers, and residents that opened their arms and told their stories...&lt;br /&gt;&lt;br /&gt;The goal of the mission was to understand the plight of the people, how the communities came together to rebuild, and find a way to let the country know of the real issues happening there. Of the many problems that people faced in reclaiming their neighborhood and overcoming the hardest battles to rebuild their lives... What I discovered was the unbelievable organization and support of the citizens, grassroot and religious organizations, and &lt;span style="font-style: italic;"&gt;many&lt;/span&gt; volunteers to reclaim neighborhoods and communities lost to the flooding. The Federal and Local government created many bumps and dead-ends along every route to recovery, without the assistance of these groups and individuals the communities affected by Hurricane Katrina would be very different.&lt;br /&gt;&lt;br /&gt;So below I have embedded the film that a dear friend, Kate Duffy and I edited from the footage gathered during the initial mission preceding Hurricane Being that the reception was to be held at the Adventure Aquarium in Camden...&lt;br /&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;beaches and aquatic life became my inspiration.&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://1.bp.blogspot.com/_04Ztd92WO_8/SjMF5OX3aBI/AAAAAAAAASk/CoWcwasSfbM/s1600-h/necklace5148.jpg"&gt;&lt;img style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 400px; height: 342px;" src="http://1.bp.blogspot.com/_04Ztd92WO_8/SjMF5OX3aBI/AAAAAAAAASk/CoWcwasSfbM/s400/necklace5148.jpg" alt="" id="BLOGGER_PHOTO_ID_5346623663287789586" border="0" /&gt;&lt;/a&gt;&lt;span style="font-size:78%;"&gt;The objects in each necklace came from either, the Jersey Shore or Pacific Coast.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;div style="text-align: left;"&gt;When I started designing the necklaces, I kept thinking of the way small objects become entangled as they wash up on the shore, sandy crab shells with barnacles, bits of a sand dollar, tiny shells... appearing as if they were stuck together by little tendrils of seaweed, that if picked up would fall apart from its delicacy. The Oregon Coast is completely accessible to the public, so I was able to soak in every second. The ride was beautiful, breath-taking, and not as hard as I thought (thank my lucky stars)!!! It totaled about 45 miles!&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://4.bp.blogspot.com/_04Ztd92WO_8/SeQ_egajpyI/AAAAAAAAARE/LMCX_SMK_b0/s1600-h/Picture+1.png"&gt;&lt;img style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 320px; height: 155px;" src="http://4.bp.blogspot.com/_04Ztd92WO_8/SeQ_egajpyI/AAAAAAAAARE/LMCX_SMK_b0/s320/Picture+1.png" alt="" id="BLOGGER_PHOTO_ID_5324450452788717346" border="0" /&gt;&lt;/a&gt;As our route, we took the Blue line out to Gresham, started bicycling at 223rd Ave to Stark and then on to the Historic Columbia River Highway.&lt;br /&gt;&lt;br /&gt;&lt;div style="text-align: left;"&gt;The steepest grade being 5%, but ascending and descending about 800 feet, we twisted and twirled through lush greenery, State Parks, and witnessed the torrential spring falls, due to the snow melting off the mountains.  As we stopped at Vista point, I couldn't help but soak in the vintage photos... I think the only difference is that it is more mossy these days. If you haven't heard, I am currently planning for a 9 day bicycling adventure along the Pacific Coast of Oregon, totaling 397.7 miles. The print challenges the viewer, because you cannot just see the tree as a print, but only if you view it through a mirrored cylinder that is placed next to it...  amazing. As legend has it, the Roman goddess Juno (a regular lighting bolt thrower) created the Milky Way from milk that spurted from her breast, all drops that fell to the earth created fields of lilies and all that stayed in the sky became the Milky Way. Yes, East coast friends are shocked at the idea, "Isn't Portland a city??" "Colleen are you really going to get chickens?" "Are you crazy?" they question. However, living in Portland, it doesn't seem like a crazy idea. It seems that I am not the only one who has caught the chicken craze! There are non-profits here dedicated to teaching urban gardeners (as we are called) how to garden, raise chickens, etc. THEY EVEN HAVE A TOUR OF CHICKEN COOPS!!  (* &lt;b&gt;Saturday, March 28, 10-1pm&lt;/b&gt;: &lt;span style="font-size: medium;"&gt;Chicken Coop Building, Design and Tour&lt;/span&gt;: Learn what is necessary to build your hens a happy home, then enjoy a short walking tour of backyard chicken coops near People's CO-OP.)&lt;br /&gt;&lt;br /&gt;So, after professing my love of the idea of having 3 cuddly chicken of my own, other friends have started planning how to get their hands on a few chicks... with the help of Steve and a great buddy, Luke, and his two dogs I am on my way to building a coop and raising a few chicken of my own. &lt;br /&gt;&lt;br /&gt;If you need an idea of how wonderful having chickens of your own can be... you will have to come to my scrambled eggs party after I have the coop up and running!! I recently have fallen in love with the age old past time, snowshoeing. I am not exactly sure what it is, maybe my new hiking boots - not only were they on sale but they feel like my feet are floating on clouds!! - or maybe it is the fact that I am walking on top of a fluffy layer of snow (which again is much like floating on a cloud?!?!) or maybe it is because it is AWESOME! regardless of the reason, I believe that everyone should give it a try. &lt;br /&gt;&lt;br /&gt;Recently visited the Tilly Jane Trail, north of Mt. Hood, &amp; Trillium Lake Trail, southeast of the mountain, both... beautiful! Next up, will be visiting my mountain sister in Upstate Washington... north north of Republic. It is a new venture for me to blog! But at the same time of biting my nails at the fact that I am unsure that I can diligently keep up with this electronic blogging beast, I am hoping that it will set a goal for me to keep my ideas, poems, notes to self, and other written bits safe from being lost in some USPS post office somewhere in America…. I happen to be one of the “unfortunates” and lost most of my precious ephemera while moving across country. 2 months after shipping, I received a busted box with a few of my keepsakes, a Harley Davidson Motorcycle pin, and a little note stating “Repackaged in Philadelphia.” With no-one left to go to, the Postal Investigators are supposedly taking care of it, I have today decided to start an electronic journal…&lt;br /&gt;&lt;br /&gt;I am not sure what will end up on this blog, hopefully it will be of interesting things.
